Colin's Corn Salad
Every Chef has their version of a Corn Salad so here is Chef Colin's take on everyone's favorite summer dish. Quick, easy and delicious, a perfect party starter or just enjoy by the pool with either a white or rosé wine.
Ingredients
- corn · 1 pound
- red onion sliced thin and chopped · 1
- Roma tomatoes diced · 3
- bunch of green onions, minced · 1
- fire roasted diced bell pepper · 1
- Herbie's Mole Poblano Blend Spices · 2 tablespoons
- limes juiced · 2
- salt and pepper to taste ·
Instructions
Char corn in sauté pan for about 5 mins or until one side has good color.
Then place corn in a bowl and mix all ingredients and season to taste.
