Zin BBQ Chicken Bruschetta

Nothing beats an easy to prepare roast chicken! Especially when roasted with garlic, butter, and our special Chicken BBQ and Roast Rub.

Ingredients

  • Chicken Thighs, grilled and diced  ·  2 
  • Herbie's Chicken BBQ & Rub Roast Rub  ·  4 tablespoons 
  • ear of Corn, shucked  ·  1 
  • Scallions, thinly sliced  ·  4 tablespoons 
  • Lime Juice  ·  1 teaspoon 
  • sprigs Cilantro, picked  ·  2 
  • Williamson Wines Zin BBQ Sauce  ·  4 tablespoons 
  • Baguette, sliced diagonally in 1/4" slices  ·  1 
  • Williamson Wines Extra Virgin Olive Oil  ·  2 tablespoons 
  • Avocados, deskinned and thinly sliced  ·  2 

Instructions

Start by heating your oven to 425 degrees.

Toss the chicken thighs in a medium bowl with 2 tablespoons of Williamson Wines Extra Virgin Olive Oil and 2 tablespoon of Herbie's Chicken BBQ & Roast Rub.

Heat a large pan or cast iron skillet over medium high heat. Once it begins to shimmer add the chicken thighs and cook for about 4 minutes until browned on one side. Then flip the chicken and cook for another 4 minutes. Remove the chicken from the pan and into an oven safe dish and bake for 30 minutes or until the reach an internal cooking temperature of 165 degrees. Once the chicken is cooked, remove from the oven, let cool and cube into 1/2" cubes.

While the chicken is cooling, lay the sliced baguette slice out on a baking sheet. Drizzle them with Williamson Wines Extra Virgin Olive Oil, salt and pepper, to taste and bake at 425 degrees for about 4-5 minutes or until lightly toasted.

While the bread is toasting, heat a large skillet over medium high heat. Add 2 tablespoons of Williamson Wines Extra Virgin Olive Oil, swirl it around then add the corn and begin to saute. Then add the diced chicken, scallions, and Williamson Wines Zin BBQ Sauce. Stir to combine and continue to cook for 1 min. Then add 2 tablespoons of Herbie's Chicken BBQ & Roast Rub. Stir until all ingredients are well incorporated then add to a medium bowl and prepare for assembly.

Pull the toasted bread out of the oven and set aside. Dice the avocado into cubes and add to the BBQ chicken mixture., season with another tablespoon of Herbies Chicken BBQ & Roast Rub, lime juice, salt and pepper, to taste. Then gently stir until all ingredients are combined.

For assembly: Lay as many slices of bread out as needed, first add the cilantro sprigs then BBQ chicken mixture and finish with another sprig of cilantro and more Williamson Wines Zin BBQ Sauce.
