Guacamole
Guacamole is an avocado-based sauce that originated with the Aztecs which has become part of modern cuisine as a dip, condiment and salad ingredient.
Ingredients
Ripe, Fresh Large California Avocados, seeded and peeled

Herbie's Guacamole Spice Mix

Medium tomato, chopped

Instructions
Traditionally made by mashing ripe avocados with a molcajete (mortar and pestle) with sea salt, and herb, spices, onion and garlic. This recipe is the simplest, most straightforward way to make perfect Guacamole.
Place avocados in a bowl and mash with a fork or a potato masher.
Add three (3) teaspoons of Herbie's Guacamole Mix.
Mix in the chopped tomato.
Serve immediately with Williamson Joy Sauvignon Blanc.
OPTION: To make your own fresh tortilla chips you will need:
3/4 cup Canola oil
12 corn tortillas, cut into fourths
Pour oil into a large frying pan to a depth of 1/2 inch.
Heat oil to 350 to 375 degrees.
In small batches, fry tortilla wedges until lightly golden.
Remove with a slotted spoon and drain well on paper towels.
Crisp and elegant this light gold Sauvignon Blanc has the illusion of citrus and passion-fruit on the nose finishing with a lingering soft, dry melon on the palate.
