Guacamole Spice Mix
Guacamole is an avocado-based sauce that originated with the Aztecs which has become part of modern cuisine as a dip, condiment and salad ingredient.
Traditionally made by mashing ripe avocados with a molcajete (mortar and pestle) with sea salt and now adding Herbie's Guacamole Mix with each mashed fresh large avocado makes a heavenly Guacamole.
Herbie's Guacamole Mix works great as a coating for fish tacos. Coat shrimp, tilapia, or cod liberally with mix before sautéing or grilling to get that authentic Mexican flavor.
Ceviche is fresh raw fish cured in citrus juices, such as lemon or lime, and spiced with seasonings and peppers. Use Herbie's Guacamole Mix as a fantastic spice base for Ceviche.
Combine in a bowl:-
- The juice of 6 limes,
- 2 tomatoes diced,
- 1 onion diced,
- 1 bunch of cilantro chopped,
- 2 tablespoons of olive oil
Toss 1 pound of shrimp in 1 tablespoon of Herbie's Guacamole Mix and add to the lime juice mixture.
Make sure all the shrimp is submerged in the juice. Cover and refrigerate for at least 8 hours or until the shrimp is firm and no longer opaque. When ready, serve with Williamson Joy Sauvignon Blanc, Relish Roussanne or Chantilly Chardonnay.
