In a bowl scramble 3 eggs.
Add crisped chopped bacon, chopped tomato, Herbies Salad Herbs and chopped baby spinach.
Pour into a buttered non stick six-inch omelette pan and cook on one side on low.
Flip over omelette then add cheese and cook in a 350 degree oven for 5 min.
Pull out the pan and slide half of the omelette on a plate then flip over the other side tacoing it.
