Ingredients
capsicums (red, yellow, orange mix) sliced into stripes

red onion halved and sliced

olive oil

2 tablespoons
chicken tenderloins

20 ounces
Guacamole
·
2 cups
Herbie’s Fajita Seasoning
·
2 tablespoons
soft tortillas to serve

Instructions
Over medium heat, cook capsicum and onion in half the olive oil and 1 teaspoon of spice mix – this will take at least 15 minutes for capsicum to be soft.
While cooking, in a large dry pan, toast tortillas for 30 seconds each side and wrap in a tea towel.
Heat remaining oil, and add chicken with remainder of spice mix.
Cook, stirring for 8-10 minutes until cooked through; season with salt to taste.
Serve tortillas on the table with Guacamole or avocados, sour cream or rice.
