A creamy soup loaded with big fluffy dumplings made from scratch. An easy & cozy recipe!

For the Dumplings

cornstarch

chicken breasts cooked and shredded

chicken stock
·
2 cups
garlic, chopped
·
1 tablespoon
thyme, chopped
·
1 tablespoon
butter
·
1/4 cup
carrots, diced
·
2 cups
celery, diced
·
2 cups
onions, diced
·
2 cups
Instructions
For the Soup
Using a stock pot, warm the pan on medium heat and add the butter.
Wait for it to melt and sizzle, then add the onions. While stirring ,add the carrots, then celery and sweat down for 2 minutes.
Then add the garlic. Sweat for an additional 3 minutes. Or until the vegetables start to get soft.
Add chopped thyme, salt, pepper, Herbies Herbs de Provence and Herbies Herb and Celery Salt and cook for another minute or two.
Now add chicken stock, cooked chicken breast meat and cream and cook for another 5 minutes until all the ingredients have combined and the cream has reduced.
Mix cornstarch with 1 tablespoon of water and slowly pour in while mixing the soup until it has thickened enough to stick on the back of a spoon.
For the Dumplings
In a separate bowl add flour, baking powder, a pinch of salt and whisk to combine all the ingredients as a dry mixture.
In a separate bowl crack two eggs, add milk and melted butter with the eggs and whisk them all together as a wet mixture.,
li>Add the wet mixture into your dry mixture and finally add in the chopped parsley.
Using a spoon begin to incorporate the batter until smooth and somewhat dry.
Once the soup is at a boil, spoon up your dumplings as individual 2oz drops of the wet dough and drop them into the slowly boiling chicken mixture.
Cover with a lid and allow the dumplings to cook for about 4 to 5 minutes.
When ready spoon out a hefty portion of both soup and dumplings
Garnish with the rest of your chopped parsley and enjoy with a glass of wine.
Jenny's Tip: - Drop dumplings are dumplings made in a bowl that you scoop out and drop into the soup to be cooked which makes them light and fluffy.
