Avocado & Truffle Salt Soup Shots
Simple, easy and delicious this Vegan soup is just the perfect starter for a summer meal paired with any of our chilled white wines.
- Avocados, peeled and pitted · 3
- Sweet basil, chopped · 1 cup
- Balsamic Vinegar, white · 1/2 cup
- Red onion, chopped · 1/2 cup
- Honey · 2 tablespoons
- Herbie's Shichimi Togarashi · 1/2 teaspoon
- Herbie's Pepper Black Asta (ground) · 1/2 teaspoon
- Truffle Salt · 2 teaspoons
- Shallots, minced - for garnish · 1/2 cup
Combine all ingredients in a blender along with two pints of water. Puree until smooth and creamy then refrigerate until chilled.
Serve in cups or small bowls with minced shallots or herb bread crumbs. Feel free to drizzle a little olive oil across the surface and sprinkle with truffle salt.
Enjoy with a well chilled Joy Sauvignon Blanc, Relish Roussanne or Caress Cuvée Blanc.
