Juicy, tender, and perfectly cooked to a medium-rare with a crusty exterior made with garlic, herbs, and lemon zest, this is one of the best cuts of lamb and makes an easy and impressive main dish for entertaining!
Make a mixture of herbs, mix in a small bowl, the rosemary, thyme, garlic, salt, pepper, and olive oil and combine well.
Rub the mixture all over the lamb, especially coating the fat side.
Place the rack of lamb into the air fryer with tThe fat side of the lamb is facing up in the Air Fryer so the fat drips down and covers the meat, making it tender.
Start the Air Fryer with temperature set to 360 degrees F, and time for12 minutes. Lamb cooks fast, especially when you are using the air fryer, so remember to check it at the 10 minute mark.
Measure your internal temperature of the rack of lamb by placing a temp probe in between the ribs, being careful not to touch any bones. Be sure the temperature exceeds 165 degrees F.
Remove the lamb from the Air Fryer, tent with foil and allow it to rest it on a plate for 10 minutes allowing its juices to settle in the middle of the meat.
