Turmeric Chai Panna Cotta

Enjoy the health benefits of turmeric with this coconut cream Panna Cotta which is also dairy free.

Ingredients

  • coconut cream  ·  2 cups 
  • organic gelatine  ·  2 teaspoons 
  • maple syrup  ·  11/2 teaspoon 
  • Herbie’s Turmeric Chai Spice  ·  3/4 teaspoon 
  • toasted coconut flakes, to decorate (optional)  ·   
  • extra maple syrup, to serve  ·   

Instructions

Place coconut cream in a small saucepan and sprinkle over gelatin, leave for one minute.

Whisk in syrup and spices and gently heat coconut cream. Do not allow to simmer or boil.

Keep whisking for 2-3 minutes while gelatin dissolves, then pour mixture into shallow molds to set.

Mixture will make 2 large or 4 small servings.

Refrigerate for 5 minutes, then gently stir to distribute spices, then leave to set for 1 hour.

To serve, place in hot water briefly, then invert onto plate.

Scatter with coconut flakes and extra maple syrup.

Panna cotta is a very basic pudding that is made of dairy thickened with gelatin. It originated in Italy and its name literally means “cooked cream,” since the earliest versions were made of thick cream.

You can eat it straight out of a cup, but it’s often unmolded onto a plate and drizzled with sweet sauce and garnished with fruit. A bite of panna cotta is remarkably creamy, melting in the mouth without a trace of grittiness or lumps.
