Strawberry Goat Cheese Toast
The amazing flavor combination in this straightforward recipe makes a delicious complexity of sweet strawberries, tangy goat cheese, toasted or grilled French bread, and tangy Balsamic glaze.
Ingredients
strawberries, rinsed

sugar

2 tablespoons
slices sourdough, cut 1 inch thick

honeycomb
·
1 ounce
balsamic glaze, for finishing drizzle

mint sprig, picked leaves

For Whipped Goat Cheese
·
soft goat cheese
·
1 cup
heavy cream
·
2 cups
Herbies Peppercorns White (ground)
·
1 teaspoon
Instructions
Lightly coat the sourdough bread slices with a neutral oil lightly toast in either a toaster oven or sauté pan over medium heat. Set aside.
In a stand mixer, add the soft goat cheese, heavy cream and white pepper. Use the whisk attachment and whisk until combined and whipped.
Remove the stem and slice the cleaned and rinsed strawberries.
Toss the strawberries with the 2 tablespoons of sugar in a mixing bowl.
To assemble, smear the whipped goat cheese on the toast and top with the sugar coated strawberries.
Add a few pieces of honeycomb along with a few pieces of torn mint.
Aged for at least one year to achieve its complexity of flavors, this goat milk cheddar is smooth, nutty and slightly sweet, with a robust cheddar flavor.
