Our Bush Tucker Rub has a set of deep, distinct flavors that complement the beef, mushrooms and haloumi perfectly. Add any selection of vegetables to the skewers, the possibilities are endless.
Ingredients
lean beef, cut into 1 inch cubes

brown button mushrooms

1/2 cup
Halloumi , cut into 1 inch pieces 1/2 inch thick

1/2 pound
Herbie’s Bush Tucker Rub
·
2 teaspoons
olive oil
·
1 tablespoon
lettuce or salad leaves, to serve

1/2 cup
Instructions
Combine meat, mushrooms and halloumi in a bowl and coat thoroughly in rub spices and oil. Can be now covered and left to marinade overnight, or assembled onto skewers straight away.
If using wooden skewers, ensure they are soaked to prevent burning, or thread onto metal skewers.
Heat a bbq or grill to medium-high and cook for 2-3 minutes each side until meat is cooked to desired level.
Serve with lightly dressed salad leaves, or put into pita bread with hummus.
Jenny's Tip: - Halloumi is a Cypriot cheese traditionally made from goat's and sheep's milk, or a mixture of the two. It's most appreciated as a grilling cheese because it maintains its shape when heated and grills well.
