Shrimp Shish Kebab, Garlic & Basil Rice
Easy shrimp kabobs, tossed up in a Mediterranean marinade with garlic and fresh herbs, then quickly cooked for the perfect appetizer.
Ingredients
Shrimp

Lime wedges
·

garlic, chopped

3 cloves
Herbies Shish Kebab Spice
·
2 tablespoons
shrimp, 16-20 per pound
·
1 pound
Rice
·
garlic, chopped
·
1 tablespoon
jasmine rice
·
1 cup
water
·
1 1/2 cup
extra-virgin olive oil
·
2 tablespoons
Herbies Basil Leaves, rubbed
·
1 tablespoon
Instructions
Shrimp Shish Kebab
Place shrimp, garlic, Herbies Shish Kebab spice and olive oil in a bowl, mix to combine and let marinate in the fridge for 30 minutes.
Preheat oven to 350 degrees.
Remove from fridge and thread two shrimp onto each skewer and place on a sheet pan.
Season with salt and pepper, roast in the oven for 10-12 minutes, flipping half way through the cooking process.
Rice
In a small pot, heat olive oil over medium heat, add chopped garlic and rice and toast for 2 minutes, add water, stir to combine and cover, simmer for 15 minutes
Remove from heat and stir in basil, season with salt and pepper.
Jenny's Tip: - Serve shrimp kebabs over the Thai basil rice with a lime wedge and enjoy!
