Shrimp Shish Kebab, Garlic & Basil Rice


Easy shrimp kabobs, tossed up in a Mediterranean marinade with garlic and fresh herbs, then quickly cooked for the perfect appetizer.

Ingredients

  • Shrimp  ·   
  • extra-virgin olive oil  ·  2 tablespoons 
  • Lime wedges  ·   
  • skewers  ·  10 
  • garlic, chopped  ·  3 cloves 
  • Herbies Shish Kebab Spice  ·  2 tablespoons 
  • shrimp, 16-20 per pound  ·  1 pound 
  • Rice  ·   
  • garlic, chopped  ·  1 tablespoon 
  • jasmine rice  ·  1 cup 
  • water  ·  1 1/2 cup 
  • extra-virgin olive oil  ·  2 tablespoons 
  • Herbies Basil Leaves, rubbed  ·  1 tablespoon 

Instructions

Shrimp Shish Kebab

  1. Place shrimp, garlic, Herbies Shish Kebab spice and olive oil in a bowl, mix to combine and let marinate in the fridge for 30 minutes.
  2. Preheat oven to 350 degrees.
  3. Remove from fridge and thread two shrimp onto each skewer and place on a sheet pan.
  4. Season with salt and pepper, roast in the oven for 10-12 minutes, flipping half way through the cooking process.

Rice

  1. In a small pot, heat olive oil over medium heat, add chopped garlic and rice and toast for 2 minutes, add water, stir to combine and cover, simmer for 15 minutes
  2. Remove from heat and stir in basil, season with salt and pepper.

Jenny's Tip: - Serve shrimp kebabs over the Thai basil rice with a lime wedge and enjoy!
