There's no rule that says Bolognese has to be made with spaghetti so try using Risoni or Orzo Pasta for a delicious Italian-style comfort food to make you feel at home.
To start Bolognese sauce, use a medium sized soup pot and set on medium-high heat. Add canola oil and wait until oil heats up.
Once hot, add onion, carrot and celery and cook until onions are translucent.
Add garlic and continue to cook for 4-6 minutes.
Then add the ground beef and press down with a wooden spoon to break up the large chunks of beef.
Continue to cook until the ground beef is tender and cook through, 8-10 minutes.
Once tender, add the canned tomatoes, chicken stock, bay leaf, and Herbie’s Herbs de Provence.
Lower heat to medium low and allow to cook down for an additional 15-20 minutes. To finish sauce, add balsamic vinegar and sugar.
Season with salt and black pepper to taste.
In a medium saucepot, fill halfway with water and add 1 tablespoon of salt.
Bring water to a boil on medium high heat. Once boiling, add risoni pasta and cook for 7-9 minutes until tender.
Once tender strain out the water and reserve in pot.
To serve, ladle warm bolognese sauce over risoni pasta pot and stir in all oregano and half of the parmesan.
Top bowl of pasta with rest of cheese and basil.
