October 2025 - Buttermilk Pecan Pumpkin Bread

Ingredients

  • All Purpose Flour  ·  2 1/2 cup 
  • Baking Soda  ·  1 1/4 teaspoon 
  • Sugar  ·  1 cup 
  • Salt  ·  1 teaspoon 
  • Cinnamon, ground  ·  1 tablespoon 
  • Ginger, ground  ·  1 1/2 teaspoon 
  • Nutmeg, ground  ·  1/2 teaspoon 
  • Herbie's Pumpkin Pie Spice  ·  1 tablespoon 
  • Buttermilk  ·  1 cup 
  • Pumpkin Puree  ·  1 cup 
  • Vegetable Oil  ·  1/4 cup 
  • Eggs  ·  2 
  • Vanilla Extract  ·  1 teaspoon 
  • Pecans, chopped  ·  1 cup 

Instructions

Pre heat your oven to 350 degrees.

Start by mixing the flour, sugar, baking soda, salt, and all of the spices in a large bowl. Mix together until well combined. In a separate small bowl combine the eggs, vanilla extract, vegetable oil, buttermilk, pumpkin puree, pecans, and whisk together until combined.

Pour the wet ingredients in the small bowl into the dry ingredients in the large bowl and gently whisk together until well incorporated but do not over mix the batter! Set aside.

Using an 8"X4" loaf pan, Add a drizzle of vegetable oil to the loaf pan and spread evenly around using your fingers then add a small amount of flour to the pan and roll the pan around until it is evenly covered with oil and flour. Tip upside down to get all of the remaining flour out of the loaf pan.

Pour the batter into the prepared loaf pan until it is 3/4 of the way up the sides of the pan. Gently shake the pan so the batter is evenly distributed. Bake the loaf for 25 minutes in your pre heated 350 degree oven.

Remove the pumpkin pecan loaf from the oven and let it cool for 20 minutes before slicing. Enjoy warm or at room temperature!
