Moo Shu Shrimp Crepe

Moo Shu Shrimp is a healthy, single-dish, protein and vegetable meal. When wrapped in a crepe pancake with hoisin sauce it is simply delicious.

Ingredients

  • CREPE  ·   
  • large eggs  ·  2 
  • milk  ·  1/2 cup 
  • water  ·  1/2 cup 
  • flour  ·  1 cup 
  • olive oil  ·  1 tablespoon 
  • Herbies Chives Freeze-Dried  ·  2 tablespoons 
  • sea salt  ·  1/2 teaspoon 
  • MOO SHU SLAW  ·   
  • pea sprouts chopped into 2 in length  ·  1 pound 
  • bunch of green onion into 2 inch pieces  ·  1 
  • yellow onion  ·  1/2 
  • sesame oil  ·  2 tablespoons 
  • bunch cilantro  ·  1 
  • SHRIMP  ·   
  • peeled and deveined shrimp  ·  1 pound 
  • Herbies Mole Poblano Blend  ·  2 tablespoons 
  • sesame oil  ·  2 tablespoons 
  • salt & pepper to taste  ·

Step 1 ~ Preparing the Greens

  • Over medium heat add oil to the pan and sauté the white onions until golden, seasoning with salt and pepper to taste.
  • Add the pea shoots also seasoning with salt and pepper to taste, turning in the pan to get the all warm then add the cilantro and green onion and continue to cook (without burning) and then add in the sesame oil, keep turning the pan and cooking until the greens soften.
  • Remove the greens from the heat and empty the pan into a bowl to cool.
  • Cut the greens into bite sized pieces and return to the bowl.

Step 2. ~ Making the Crepes

  • In a large mixing bowl add in the eggs and whisk
  • Gradually add the milk pouring down the bowl side and whisk, then the water, followed by the chives, then the olive oil, whisking to combine after each addition. Finally add the flour and continue whisking, seasoning with salt and pepper to taste, until combined and the batter is smooth
  • In a pan over medium heat, add the oil then, using a ladle, add about 1/4 cup of the batter onto pan, swirling it to evenly coat
  • Cook both sides until golden and crispy - about 2 minutes on first side, then flip and cook about 1 minute more
  • Set the crepe on a plate to construct the dish Repeat with remaining batter

Step 3. ~ Stir-fry the Shrimp

  • Cut off the shrimp tails and the cut them in half longitudinally
  • Coat the shrimp with Herbies Mole Poblano Spice
  • Add the sesame oil and using your hands make sure the shrimp are completely coated with the oil and spice
  • Over medium heat add oil to the pan and sauté the shrimp, seasoning with salt and pepper to taste and cook until the shrimp are caramelized (it's OK if the oil flames up a little)

Step 4. ~ The Big Finish

  • Lay a crepe out flat on a plate
  • place a row of greens across the center of the crepe
  • add the shrimp and roll the crepe folding it like a tiny burrito
  • Serve with cilantro and hoisin sauce on the side

Jenny's Tip: - Rich, sweet and salty, hoisin sauce is the perfect foundation for Asian-inspired dishes likely because it contains soy sauce, molasses, rice vinegar, peanut butter, garlic, sriracha, ground pepper and cornstarch.
