Lamb chops are such an easy and delicious dish. Marinated in rosemary and garlic, seared in a cast iron pan on the stovetop and a romantic dinner is ready.
Mix the rosemary, salt, pepper, garlic, and 2 tablespoons of the olive oil together. Coat the lamb chops with the mixture, massaging it into the meat with your fingers. Let stand at room temperature for 30 to 45 minutes.
Heat the remaining 2 tablespoons olive oil in an oven-proof sauté pan over high heat. When the oil is shimmering hot, sear the chops on both sides about 1 to 2 minutes per side. Check thick chops using an instant read thermometer: - 125°F for rare, 135°F medium-rare, and 140°F for medium.
Remove the chops from the pan, tent with foil and let rest 3 to 5 minutes before serving.
