Bill's Oven-Roasted Garlic-Garlic-Garlic Bread

Food, especially Italian food, seems lonely without garlic bread, and it's so easy to make. There are several methods for making garlic bread and here is Bill's favorite, originally passed down to him from his mother Mary over fifty years ago.

Bill loves butter and garlic. Just one slice of this garlic bread is believed to banish vampires, but no one has ever been able to stop at one slice.

Ingredients

  • medium course salt  ·  1 tablespoon 
  • Herbie's Garlic Powder (Granulated)  ·  1 tablespoon 
  • baguette loaf of French bread  ·  1 
  • whole garlic clove  ·  1 
  • extra virgin olive oil  ·  ¼  cup 
  • sliced scallion (spring onion)  ·  2 tablespoons 
  • Herbie's Italian Herbs  ·  2 tablespoons 
  • Fresh ground black pepper  ·  1 tablespoon 
  • Aluminum foil  ·  1 piece 
  • French Butter with Fleur de Sel  ·  1 stick 

Instructions

Peel the entire garlic clove and crush it into a microwavable glass bowl or Pyrex jug.  Add the bar of butter and olive oil then microwave for about 1 minute (or stove top) until the butter is melted, taking care not to burn or boil the butter-oil-garlic mixture.

In a separate bowl combine the scallions garlic powder, salt, pepper and Italian herbs so they form a dry mixture.

Slice the baguette across on a 45 degree angle taking care not to completely cut all the way through the bottom crust.  The objective is to have the baguette cut into slices about 1 inch thick but still remain a single loaf.

Place a sheet of aluminum foil about 12 inches longer than the baguette on the counter top and place the baguette centered on the foil.

Separate each slice and, using a teaspoon, spoon the butter mixture into each slice, spreading it across each slice of the baguette.  Once finished, reverse the baguette and cover the other side of each slice.

Again, separate each slice and sprinkle a little of the dry mixture onto each.  Once finished pour any remaining butter mixture along the top of the baguette and liberally sprinkle the top with the dry mixture.

Wrap the baguette in the foil, folding in the ends so they can be easily unfolded while hot.  Place the foil package into an oven preheated to 250 degrees.  Bake for about 10 minutes, remove and open the top of the foil leaving an open slit about 2 inches wide all along the top of the baguette.  Return the package to the oven for another 10 minutes.

Serve hot in the foil inside a long bread dish or basket.  Alternatively, serve wrapped in a clean tea towel.  Allow each guest to tear off a section of the slices and enjoy with any of the Williamson Bordeaux Blend wines.
