Avocado Goat Cheese Toast

There’s a reason why these Avocado toast is all the rage and topping it with Goat cheese takes this breakfast staple to the top of the charts.


  • avocados, peeled and pitted  ·  2 
  • large eggs  ·  4 
  • lime juice  ·  2 tablespoons 
  • Herbies Pepper Cracked Asta Black  ·  1 teaspoon 
  • slices sourdough bread, toasted  ·  4 
  • Goat cheese, shredded  ·  1/2 cup 
  • Herbies Cumin Seed (ground)  ·  2 teaspoons 


  1. Bring a large pot of water to a boil.
  2. Once the water is boiling, turn off the heat, and carefully crack eggs, 1 at a time, into water.
  3. Cover and cook until whites have set, about 4 min.
  4. Transfer with a slotted spoon to a plate.
  5. Meanwhile, in a medium bowl, mash the flesh of the avocado with the back of a fork.
  6. Add lime juice, cumin, salt, and pepper and mix to combine.
  7. Spread avocado onto toasted bread and top with eggs.
  8. Garnish each toast with 2 tbsp cheese and cracked black pepper.
