Neroli Oil

$18

Orange flower water, or orange blossom water, is a clear, perfumed distillation of fresh bitter-orange blossoms.

Orange Blossom Water, also known as the Essential Oil of Neroli, is produced by water distillation of the blossoms of the bitter orange tree (Citrus Aurantium).

Familiar to French, Persian, Arabic, Indian and Turkish cuisine, Orange Blossom Water brings the sweet perfume of the orange grove to a variety of dishes. It is a delicious addition to various sweets including custards, puddings, cakes, cookies, candies and other confections.

Orange blossom water's flavor comes as a surprise melding the clean brightness of orange groves with a field of wildflowers. Delicately citrus and floral, its scent is remarkably refreshing and can be used as an alcohol-free fragrance, especially in summer. French women will dab a few drops behind their ears and on both wrists and walk out into the sunshine.

Usage Suggestions

Orange blossom water works well most places rose water does, and you can use them more or less interchangeably.

If you're looking to introduce orange blossom water into a recipe from scratch, start with a 1/2 teaspoon. The flavor is different enough from orange zest that we wouldn't suggest substituting them for each other, but if you wanted to, a teaspoon of orange blossom water will roughly replace a teaspoon or orange zest.

Background

This essential water has traditionally been used in many French and Mediterranean dessert dishes, such as the gibassier and pompe à l'huile, but has more recently found its way into Western cuisine.

Orange flower water is used in France to flavor madeleines, in Mexico to flavor little wedding cakes and Pan de muerto, and in the United States to make orange blossom scones and marshmallows.

Orange flower water is also used as an ingredient in some cocktails, such as the Ramos Gin Fizz.

It has been a traditional ingredient used often in North African as well as in Middle Eastern cooking. In Arab variants of baklava, orange blossom water is often mixed with the sweet syrup for flavor.

Orange blossoms are believed to be used in this manner because they are seen as the traditional bridal flower and, therefore, symbolize purity (white, small and delicate).
