This cheddar rubbed with Hatch Chiles is an expression of love for the landscape of the American Southwest; the rind is almost as stunning as a Canyonlands vista. Beautifully layered like Entrada Sandstone, the paste of Red Butte is tumbled with Hatch Chiles and complex flavors.

Creamy and smoky with a proper balance of heat. The coriander in the rub on the rind gives Red Butte a mellow lemony undertone. The New Mexico Hatch Chiles in the paste provide depth and smokiness.

The cheese is great for an intimate gathering. You can share with other people or hide it in your fridge and nibble away in secrecy. We won’t tell on you.

After learning how to make their base cheese, Promontory, the partners realized pretty quickly that you can’t make great cheese without the best milk. They chose to partner with Wadeland South, a fourth-generation family creamery. The Wade family cares for a healthy and thriving herd of Holstein and Jersey cows. The high butter fat of their milk gives Beehive Cheeses a consistent, rich quality.
