Recipes

Apple & Horseradish Jam Glazed Salmon

  • 1/3 cup Apple & Horseradish Jam
  • 1 Tbs chopped fresh chives
  • 1 Tbs white wine vinegar
  • 1/2 tsp kosher salt
  • 4 (6-oz) salmon fillets, skin removed
  • 1/4 tsp freshly ground pepper
  • 2 tsp olive oil

Preheat the oven to 350.

In a small bowl, whisk together the jam, chives, vinegar, and 1/4 tsp of the salt.

Heat oil in a large oven-safe skillet over medium heat. Sprinkle salmon on both sides with remaining salt and pepper. Lay in a single layer, being careful not to crowd, and cook for 3 minutes. Carefully flip the salmon fillets, and brush the tops with half the glaze.

Transfer the skillet to the oven and bake for 5 minutes, or until the meat flakes easily with a fork. Remove from oven and brush with remaining glaze. Serve immediately over rice or with roasted vegetables.

Apple & Horseradish Jam Glazed Carrots

Young vegetables, cooked simply, are delicious. Here is an interesting combination of ingredients; carrots with apple and horseradish jam! Served with a simple grilled steak and steamed broccoli, these carrots will give your meal a little sweet and salty accent with a little bite.

  • 10 Baby carrots
  • 1/3 cup Apple & Horseradish Jam
  • 1 Tbs fresh minced parsley
  • 1 Tbs creme fraiche
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground pepper
  • 2 tsp butter

Place enough water to cover the bottom of the pan with the butter and salt and cook the carrots gently under the lid till almost cooked. Remove the lid and let the water evaporate. Plate and top with minced parsley and creme fraiche. Serve with grilled steak and steamed broccoli (optional).
