Wine Poached Pears

Ingredients

  • Water  ·  1 quart 
  • Sugar  ·  1 cup 
  • Caress Cuvée Blanc  ·  1 
  • Pears; peeled, cored, and quartered  ·  4 
  • Herbies Cinnamon Quills (whole)  ·  1 
  • Vanilla  ·  2 teaspoons

This simple wine poached pear recipe is a perfect dessert option for cold winter nights or as an elegant brunch dish. The recipe maximizes the pear's natural sweetness, combining it with a delicious wine and highlighting both with a touch of cinnamon and vanilla. Truly decadent!

Combine all ingredients, except pears, in a large saucepan and bring to a boil. Be careful not to allow the pears to poke out of the water, or not cooking them through sufficiently. Either will cause the pears to discolor. You need to make sure they cook evenly, and thoroughly.

Once the wine mixture is boiling, turn heat down to a simmer and add the pear slices carefully with a spoon.

Simmer pears for 10-12 minutes and then turn pears and simmer for an additional 8-10 minutes until they are tender and are easily poked through with a fork.

Remove pears and let them cool.

Boil wine sauce until the liquid has been reduced by half.

Pour sauce over pears and serve with white chocolate, crème fraîche and vanilla ice cream. Enjoy with Williamson Caress Cuvée Blanc.
