Thai Green Shrimp Curry

Thai Green Shrimp Curry is a creamy, smooth curry that is a lighter, mild curry, very popular in Thailand and best enjoyed with a bowl of Jasmine rice.

Ingredients

  • Raw Shrimp, peeled and deveined  ·  2 pounds 
  • Vegetable Oil  ·  1 tablespoon 
  • Yellow onion, sliced  ·  1 
  • Scallions, thinly sliced white and green  ·  1/3 cup 
  • Garlic, minced  ·  2 cloves 
  • Green Curry Paste  ·  2 1/2 tablespoon 
  • Herbie's Green Curry Powder  ·  1 tablespoon 
  • Coconut Milk  ·  1 (14oz) can 
  • Water  ·  1/4 cup 
  • Fish Sauce  ·  2 tablespoons 
  • Brown Sugar  ·  1 tablespoon 
  • Lime, juiced  ·  1 
  • Cilantro, chopped  ·  1/4 cup 

Instructions

  1. Heat the oil in a large skillet over medium high heat. Add the onions and cook, stirring frequently until they are soft, about 3 min.
  2. Add the scallions, garlic, green curry paste, and Herbie's Green Curry Powder. Continue to cook, for about 2 min.
  3. Add the coconut milk, water, fish sauce, and brown sugar. Bring to a gentle boil.
  4. Add the shrimp and cook until the shrimp is just cooked through and is opaque about 4 minutes.
  5. Juice the lime directly into the pot and fold in the chopped cilantro. Adjust seasoning according to taste.

Serve over jasmine rice.
