Thai Green Shrimp Curry
Thai Green Shrimp Curry is a creamy, smooth curry that is a lighter, mild curry, very popular in Thailand and best enjoyed with a bowl of Jasmine rice.
Ingredients
Raw Shrimp, peeled and deveined

Vegetable Oil

1 tablespoon
Yellow onion, sliced

Scallions, thinly sliced white and green
·
1/3 cup
Garlic, minced
·
2 cloves
Green Curry Paste
·
2 1/2 tablespoon
Herbie's Green Curry Powder
·
1 tablespoon
Coconut Milk
·
1 (14oz) can
Water
·
1/4 cup
Fish Sauce
·
2 tablespoons
Brown Sugar
·
1 tablespoon
Lime, juiced
·
1
Cilantro, chopped
·
1/4 cup
Instructions
Heat the oil in a large skillet over medium high heat. Add the onions and cook, stirring frequently until they are soft, about 3 min.
Add the scallions, garlic, green curry paste, and Herbie's Green Curry Powder. Continue to cook, for about 2 min.
Add the coconut milk, water, fish sauce, and brown sugar. Bring to a gentle boil.
Add the shrimp and cook until the shrimp is just cooked through and is opaque about 4 minutes.
Juice the lime directly into the pot and fold in the chopped cilantro. Adjust seasoning according to taste.
