Spring Berry Crumble

Easy and bursting with fresh berry flavor this Berry Crumble recipe is a perfect, yummy dessert or just for an anytime snack.

Ingredients

  • All Purpose Flour  ·  2 cups 
  • Blueberries  ·  1 cup 
  • Blackberries  ·  1 cup 
  • Raspberries  ·  1 cup 
  • Butter unsalted, cold  ·  3/4 cup 
  • Herbie's Cardamom Ground  ·  1 teaspoon 
  • Lemon Zest  ·  1 teaspoon 
  • Lemon Juice  ·  2 teaspoons 
  • Cornstarch  ·  2 teaspoons 
  • Sugar  ·  1/3 cup

  • For the Fruit Filling:  ·   
  • Egg Yolks  ·  2 
  • Sugar  ·  3/4 cup 
  • Apple Cider Vinegar  ·  1 teaspoon 
  • Vanilla Extract  ·  1 1/2 teaspoon 
  • Salt  ·  1/4 teaspoon 
  • Baking Powder  ·  3/4 teaspoon 

Instructions

Pre heat oven to 350 degrees

Combine the flour, sugar and baking powder in a bowl. Grate in the chilled butter, tossing frequently. Stir in the egg yolks and vanilla with a fork until the egg is mostly absorbed. Add 1 teaspoon of apple cider vinegar; Mix briefly. Use your hands to finish mixing, Squeezing until clumps form, but mixture remains mostly dry. Add more vinegar if needed. Set crumble aside.

For the Fruit Filling: Combine all berries in a large bowl. Add sugar, cornstarch, lemon juice, lemon zest and Herbie's Cardamom Ground. Mix well until combined and the sugar/cornstarch mixture has completely dissolved.

Place the crumble mixture into the bottom of a 2 qt baking dish. Press mixture down using a flat cup until well compressed. Spread berry filling on top. Sprinkle remaining crumble mixture over the berries. Squeezing some of the crumble into clumps.

Bake in a 350 degree preheated oven until top is beautifully browned and berry filling bubbles. 40 to 45 min. Let cool to room temperature before serving.
