Shrimp Spring Roll & Sweet Chili Sauce

Here’s a fresh and flavorful Shrimp Spring Roll with Sweet Chili Sauce recipe - light, colorful, and perfect as an appetizer or lunch.

Ingredients

  • Shrimp, poached and sliced in half lengthwise  ·  1 pound 
  • Store-bought Thai Peanut sauce  ·  1/2 cup 
  • Head Butter Leaf Lettuce  ·  1 
  • Sheets of Rice Paper or Spring Roll Wrappers (round)  ·  4 
  • Herbie's Native River Mint  ·  1 teaspoon 
  • Vermicelli Noodles, cooked  ·  1 pound 
  • Red Bell Pepper, cut into match sticks  ·  1 
  • Carrot, cut into match sticks  ·  1 
  • Store-bought Thai sweet chili sauce  ·  1/2 cup 

Instructions

  1. Prep ingredients: Cook vermicelli noodles according to package instructions. Rinse under cold water and drain well.
  2. Soften wrappers: Fill a large shallow dish with warm water. Dip one rice paper wrapper in the water for about 5 seconds until pliable but not mushy. Remove the wrapper from the warm water and lay the wrapper flat on your moistened board. Gently smooth out the air bubbles in the wrapper.
  3. Assemble roll:
    • Then begin to build your spring roll by laying down the butter lettuce. Fold the lettuce leaf in half lengthwise and arrange about 1/4 of the way up the wrapper in front of you. Add just a small handful of cooked vermicelli noodles on top of the folded piece of butter lettuce. Do not over fill! Followed by a few matchsticks of carrots and bell pepper.
    • Then add a few leaves of the Thai basil and fresh mint into the roll behind the lettuce. Season with a teaspoon of Herbie's Native River Mint then add 4 pieces of cooked shrimp separately and towards the top of the rice paper. The idea is to evenly distribute the ingredients accordingly so you are able to make at least 4 large spring rolls.
    • Now for the wrapping: you are going to wrap the spring roll up like a sleeping bag to start. Place 4 fingers around the ingredients while leaving your thumbs free to pull on the wrapper and let it stick to your board to create some tension, then gently fold over the ingredients. Hold the flap down while you carefully fold in the sides of the wrapper like a burrito. Roll a few more times over itself until the spring roll is completely rolled.
  4. Repeat with remaining ingredients.
  5. Serve immediately with a side of sweet chili sauce and peanut sauce for dipping.
