Crafted solely from olives grown and harvested on our Home Ranch, our Extra Virgin Olive Oil is a pure expression of place. Never blended with olives from other growers, every bottle represents only the fruit of our Tuscan olive groves and the character of our estate.
Our orchards are planted with the four traditional olive varietals of Tuscany—Frantoio, Moraiolo, Leccino, and Pendolino—carefully imported and cultivated on our ranch. A majority of our trees are Frantoio, prized for producing oils with vibrant fruit character, rich color, and exceptional depth.
Traditional Milling, Artisan Care
Our olives are milled using a traditional stone olive mill certified by the California Certified Organic Farmers, preserving the integrity of our artisan approach.
We maintain low milling temperatures to protect the delicate aromas, flavors, and natural properties of the fruit while minimizing bitterness. After milling, the oil is gently settled in barrels before being carefully racked and bottled.
We intentionally leave our oil unfiltered, preserving its fullest flavor, natural texture, and beneficial compounds—allowing the olive oil to remain as close as possible to its original estate-grown character.
