Shiitake Mushroom Toast
Cheesy sautéed mushrooms on toast is an easy recipe that's sure to please everyone, especially with Passion Pinot Noir.
Ingredients
sliced shiitake mushroom

2 cups
sliced cremini mushroom
·
2 cups
large Vidalia onion, sliced thinly

Herbie's Peppercorns White (ground)
·
1 teaspoon
olive oil
·
1 tablespoon
Skyhill Garlic + Chive Chèvre
·
4 ounces
slices sourdough baguette crostini, toasted
·

bunch chives, sliced
·

hardboiled eggs
·

Instructions
Add sliced onions to large non-stick pan on stovetop and cook on medium-high heat for 15-17 minutes until caramelized.
Remove onions from pan and add both sliced mushrooms along with 1 tablespoon of olive oil.
Cook mushrooms for 8-10 minutes.
Add caramelized onions back to the pan along with white pepper and stir to combine.
Set aside and keep warm by covering pan.
Peel hardboiled eggs and separate white from yolk.
Press hardboiled yolk through fine mess strainer.
Mix sifted egg yolk with sliced chives.
Spread Skyhill cheese evenly on toasted baguette crostini.
Add warm mushroom, caramelized onion and finish with sifted egg yolk and chives.
