Crispy Salt & Pepper Scallops

A simple, easy, one-pan dish that you can quickly whip up with just a few fresh ingredients.

Ingredients

  • Large Scallops, cleaned  ·  1 pound 
  • + 2 tblsp Vegetable Oil  ·  1/2 cup 
  • Herbie's Salt & Pepper Squid Seasoning  ·  3 tablespoons 
  • Flour  ·  1 cup 
  • bunch Scallion or Green Onion, sliced thin  ·  1 
  • Garlic, minced  ·  2 cloves 
  • Fresno Chili's, sliced and seeded  ·  3 
  • Brown Sugar  ·  2 tablespoons 
  • bunch Cilantro sprigs, picked  ·  1/2 

Instructions

Start by adding the flour and 2 tblsp Herbie's Salt & Pepper Squid Seasoning to a large bowl. Toss the scallops in the flour mixture until they are light coated.

Heat 1/2 cup of vegetable oil in a skillet over medium heat until it almost begins to smoke. Carefully add each scallop to the pan one at a time. Pan fry the scallops until they are golden brown, about 2 min on each side, flipping halfway through. Remove them from the oil and drain on a paper towel.

Remove oil from the skillet and wipe out with a paper towel. Add 2 tablespoons of oil back to the pan, once heated add the Fresno chilis, garlic, and scallions. Cook until fragrant. Then add the sugar and scallops back to the pan and toss until everything is coated in the sauce.

Serve immediately on a plater, garnish with cilantro sprigs and finish by seasoning the dish with another tablespoon of Herbie's Salt & Pepper Squid Seasoning.
