Roasted Salmon & Asparagus Salad

Salmon and Asparagus Salad - a perfect easy meal when you want a nice salad for dinner with a little something extra.

Ingredients

  • SALMON  ·   
  • each 6oz Salmon Fillets  ·  4 
  • Herbie’s Catch of the Day spice  ·  2 tablespoons 
  • ASPARAGUS SALAD  ·   
  • bunches green asparagus  ·  2 
  • pitted, chopped green olives  ·  2 tablespoons 
  • head of cleaned, chopped frisee leaves  ·  1 
  • lemon, zested  ·  1 
  • olive oil  ·  1/4 cup 

Instructions

For Salmon

    Preheat oven to 400 degrees.
  • Generously sprinkle the salmon fillets with the Catch of the Day spice.
  • Place Salmon on non-stick cook pan. Cook in oven for 15-17 minutes until golden brown.
  • Remove from oven and allow fish to rest for 7 minutes.

For Salad

  • Boil asparagus until just tender, drain and rinse with cold water.
  • Mix chilled asparagus, chopped olives and frisee leaves in a large bowl and dress with olive oil and lemon zest.
