Roasted Chicken Salad on Crostini

Enjoy these tasty chicken crostinis – a flavorful lunch or brunch that can be made in minutes.


  • cooked, chopped chicken  ·  4 cups 
  • chopped celery  ·  1 cup 
  • halved red seedless grapes  ·  1 cup 
  • mayonnaise  ·  1 cup 
  • Herbie’s Herbs de Provence  ·  1/2 teaspoon 
  • salt  ·  1/2 teaspoon 
  • ground black pepper  ·  1/2 teaspoon 
  • baguette, cut into 1/2-inch-thick slices  ·  1 
  • olive oil  ·  2 tablespoons 


Preheat an oven to 350°F. Arrange the baguette slices on a baking sheet and brush lightly with the olive oil. Season with salt and pepper. Bake until golden, 10 to 15 minutes. Transfer to a platter.

Add chopped chicken to a large bowl along with celery, grapes mayonnaise, herbs de Provence spice, salt and pepper. Stir together until combined.

Serve over lightly toasted crostini.

Garnish with sliced chives.
