Directions:
Pre heat your oven to 400 degrees.
Add the whole beets, rinsed with the skin on to a baking dish. Then drizzle with 3 tablespoons of olive oil, add Herbie's coriander seed, bay leaves, garlic flakes and peppercorns. Add 1/2 cup of water and cover the dish tightly with foil and roast in the oven for at least 45min. (they could take up to 11/2 hours depending on the size of the beets.)
Meanwhile, lay the cippoline onion out on a cookie sheet. Toss them with 1 tablespoon of olive oil and salt to taste. Roast them in the oven at 400degrees for 10 min. or until they begin to turn a deep golden brown color.
Once the beets are fork tender take them out of the oven and let them cool.
