Roasted Beet Canape

Ingredients

  • Puff Pastry, cut into 1 inch squares  ·  1 package 
  • Golden Baby Beets, with tops trimmed off  ·  4 whole 
  • Herbie's Bay Leaves Turkish (whole)  ·  3 pieces 
  • Herbie's Coriander Seed (whole)  ·  1 tablespoon 
  • Herbie's Garlic Flakes (large slices)  ·  2 tablespoons 
  • Salt  ·  to taste 
  • Olive Oil  ·  4 tablespoons 
  • Cippoline Onions, peeled and cut into quarters  ·  6 whole 
  • Chevre Goat Cheese  ·  6 ounces 
  • Thyme, picked off the stem  ·  4 pieces 
  • Williamson Wines Sweet Beet Horseradish Mustard  ·  1/2 cup 

Instructions

Directions:

  • Pre heat your oven to 400 degrees.

  • Add the whole beets, rinsed with the skin on to a baking dish. Then drizzle with 3 tablespoons of olive oil, add Herbie's coriander seed, bay leaves, garlic flakes and peppercorns. Add 1/2 cup of water and cover the dish tightly with foil and roast in the oven for at least 45min. (they could take up to 11/2 hours depending on the size of the beets.)

  • Meanwhile, lay the cippoline onion out on a cookie sheet. Toss them with 1 tablespoon of olive oil and salt to taste. Roast them in the oven at 400degrees for 10 min. or until they begin to turn a deep golden brown color.

  • Once the beets are fork tender take them out of the oven and let them cool.
