Pan-seared Salmon + Mango Salsa

If you love salmon and mango then this dish will excite you. You can never go wrong with a pairing on pan-seared salmon topped with a fresh and delicious mango salsa.

Ingredients

  • 4 Salmon Fillets  ·  6 ounces 
  • Canola Oil  ·  1 tablespoon 
  • Diced Mango  ·  2 cups 
  • Small Diced Red Onion  ·  1/2 cup 
  • Small Diced Jalapeno  ·  1/4 cup 
  • Small Diced Roasted Red Pepper  ·  1/4 cup 
  • Lime, juiced  ·  1 
  • Honey  ·  1 tablespoon 
  • Herbie's Korean Pepper Flakes  ·  1 teaspoon 
  • Cilantro Sprouts  ·  1/4 cup 
  • Olive Oil  ·  2 tablespoons 

Instructions

In a large sauté pan, heat canola oil on medium-high heat until light smoking.

Generously season salmon fillets with salt and pepper both side of the fish.

Once pan is hot, lay salmon fillets meat side down. Slide pan in a circulate motion to ensure the fillets aren’t sticking to the pan. Pan needs to be extremely hot to ensure a proper searing. After 8-10 minutes, flip fillets over and continue to cook for 6 minutes until salmon is cooked through with an internal temperature of 145F. Remove salmon from pan and let rest for 8-10 minutes.

In a medium size mixing bowl, combine fresh diced mango, red onion, jalapeno, roasted red pepper, lime juice, honey, Herbie’s Korean Pepper Flakes and olive oil. Season lightly with salt.

To serve, lay salmon on plate and top generously with mango salsa and fresh cilantro spouts. Chopped fresh cilantro sprigs is a great substitute for the sprouts.
