Lamb Lollipops with Smokey Onion Crème Fraiche

These Lollipops qualify as "food on a stick", fun to eat, you don’t have to use utensils and will become your favorite way to eat lamb. Whether a cocktail party or a quick weeknight dinner they’re perfect as is and the only accompaniment is the Smokey Onion Cream Fraiche and a few napkins!

Ingredients

  • 12 Individual Lamb Chops  ·   
  • 2 tablespoons Herbie's Lamb Roast & BBQ Crust  ·   
  • 1/2 cup Williamson Wines Smokey Onion Mustard  ·   
  • 1/2 cup Creme Fraiche  ·   
  • 2 tablespoons Vegetable Oil  ·   

Instructions

Lamb Lollipops are simply a cleaned rack of lamb, cut into individual thin lamb chops. These meat pops have a uniquely savory, and robust flavor that cooks hot and fast for a quick meal.

  • Start by pre-heating your grill on high heat.
  • In a small bowl combine Williamson Wines Smokey Onion Mustard with the Creme Fraiche. Mix until well incorporated. Refrigerate for later use.
  • Once the grill is hot. Oil the grill using a pair of tongs and paper towels. Carefully soak the paper towels in the vegetable oil, pick them up with the tongs and rub the grill quickly just to keep the lamb chops from sticking.
  • Season the lamb chops liberally with Herbie's Lamb Roast and BBQ Crust. Place the lamb chops on the grill and cook for about 3 min. on each side.
  • Take them off the grill and serve immediately with the smokey onion creme fraiche and enjoy with a glass of Williamson Wines Trinity!

Chef Tommy's Tips:

Don't want to use the grill? No problem!

  • Heat a large saute pan over high heat.
  • Add 2 tablespoon of vegetable oil.
  • When the oil begins to shimmer add the seasoned lamb chops (you may need to do them in batches).
  • Cook them for about 3 min. on each side.
  • You can finish them in the oven if you like your lamb more well done.
  • Serve immediately with the smokey onion creme fraiche!
