Chocolate Snowball Cookies with Blackberry Preserve
A fun and festive holiday treat Chocolate snowball cookies are easy to make and always delicious. Once friends and family taste them you will have needed to make two batches.
Ingredients
For the Cookies:

Butter, softened

Sugar

Egg, room temperature

Vanilla Extract

All Purpose Flour

2 cups
Cocoa Powder
·
1/2 cup
Baking Powder

1 teaspoon
Salt

1/2 teaspoon
Baking Soda

1/4 teaspoon
Powdered Sugar
·
2 cups
Herbie's Sugar 'n' Spice
·
2 tablespoons
For the Blackberry Preserve:

Blackberries
·
6 ounces
Sugar
·
2 tablespoons
Water
·
2 tablespoons
Instructions
Making the Cookie Dough
In a stand mixer or in a large bowl, whisk the softened butter and brown sugar until light and fluffy, 5-7 minutes.
Add the egg, milk and vanilla; mix well until fully incorporated.
Combine the flour, cocoa powder, baking powder, salt and baking soda in a bowl then gradually add to creamed mixture to form a cookie dough.
Cover and refrigerate for 30 min to 1 hour.
Making the Blackberry Preserve.
Add sugar and the water to a small saucepan over medium heat. as soon as it comes to a boil remove from the heat and let it cool.
Add the blackberries to a bowl and pour over the cooled liquid or simple syrup.
Stir vigorously until the blackberries begin to macerate. Cover and refrigerate for the following day.
Baking the Cookies
When ready to bake, start by preheating your oven to 350°
Shape the cookie dough into 1-in. balls; place 2 in. apart on ungreased baking sheets.
Bake at 350° for 7-8 minutes.
Remove and cool before final coating.
Final Assembly
Combine powdered sugar and Herbie's Sugar 'n' Spice in a bowl and roll each cookie in it so they are evenly coated and resemble 'snowballs'.
Garnish with the blackberry preserve on top of each cookie and enjoy!
