Cajun Shrimp and Grits

Cajun Shrimp and Grits- creamy grits with Cajun seasoned shrimp with bold and spicy seasonings - Wow!   

Ingredients

  • For The Shrimp:  ·   
  • 1lb Wild Caught Shrimp, peeled and deveined  ·   
  • Butter  ·  4 tablespoons 
  • Shallots, minced  ·  2 tablespoons 
  • Herbie's Cajun Spice Mix  ·  1 tablespoon 
  • Juice of 1 Lemon  ·   
  • For the Grits:  ·   
  • Stone Ground Corn Grits  ·  1 cup 
  • Heavy Cream  ·  2 cups 
  • Water  ·  2 cups 
  • Butter  ·  4 tablespoons 
  • Diamond Crystal Kosher Salt  ·  1 tablespoon 

Instructions

For the shrimp:

Heat a large saute pan over medium heat, add the butter and when the foam subsides add the minced shallots and saute for 3 minutes until translucent.

Add the shrimp and sprinkle with 1/2 of the Cajun Spice Mix. Saute 2 minutes and flip the shrimp and cook one more minute, sprinkling with the remainder of the Cajun Spice Mix. Remove from the heat and add the lemon juice.

Serve warm over grits.

For the grits:

Add the heavy cream and water to a large heavy bottomed sauce pot over medium high heat and bring to a boil.

Add the salt to the liquid.

Once liquid starts boiling, briskly whisk in grits and bring heat down to low and cover with lid. Cook for 20-30 minutes stirring every few minutes during this time to maintain smoothness.

Once they are tender and no longer gritty, stir in the butter and season with salt to taste.
