Instructions

Directions:

To prepare the meatballs: Add the ground beef, egg, breadcrumbs, salt, and Herbie's Rib Spice Mix. Mix thoroughly until all ingredients are well incorporated. Then roll the meatballs out into 1/2 ounce balls. Lay them out on a sheet tray and reserve for cooking.

Start by heating 2 tablespoons of olive oil in a large pot or dutch oven over medium high heat. Once the oil begins to shimmer add the meatballs and sear on each side for 2 min. Once the meatballs are browned on all sides, remove them from the pot and reserve.

While the pot is still hot, add the garlic and onions. Cook for about 5 minutes or until the onions are translucent. Then add the rest of the ingredients listed for the BBQ sauce and reduce down to a simmer. Simmer for about 30min. until all the flavors are rounded out.

Now you are ready to cook the meatballs in the sauce. While the sauce is still at a simmer, add the meatballs back to the sauce and cook for at least 15 minutes or until the meatballs have reached your desired doneness. Then remove the pot from the heat.

To serve: Arrange the meatballs on a large platter, pour over as much sauce as you want and insert a tooth pick into each one. Enjoy with a glass of Williamson Wines Tango Malbec!

Chef's Tip: - This recipe will be great with ground pork too!
