Baked Brie & Cranberry Pastry Squares

Ingredients

  • Sheet of Puff Pastry  ·  1 
  • Egg, lightly beaten  ·  1 
  • French Brie  ·  8 ounces 
  • Brown Sugar  ·  3 tablespoons 
  • Dried Cranberries  ·  1 cup 
  • Pecan Pieces  ·  3/4 cup 
  • Herbie's Mixed Herbs  ·  1 tablespoon 

Instructions

Preheat the oven to 425 degrees.

Start by whisking the egg in a small bowl. Set aside for later use.

Lay the puff pastry flat on a parchment lined baking sheet then divide into 3" squares and separate.

Next, slice the brie into ¼" thick & 2" long slices and place in the center of each pastry square with out having the cheese go over the sides (stack almost on top of each other if needed).

Once all of the brie is assembled on the squares, evenly sprinkle brown sugar over the brie slices until it is all used up. Then evenly distribute the chopped pecans and cranberries on top of each square.

Fold each of the 4 corners of pastry, just slightly over the brie and try to connect all 4 corners together in the middle of the pastry square. They should look like flat pockets of pastry with bits of everything bursting out the sides.

Brush each pastry square with the beaten egg and bake for 15 to 20 min or until the brie is melted and the pastries are golden brown.

Pull them out of the oven and serve immediately. Garnish with Herbie's Mixed Herbs and enjoy with a glass of Heritage Shiraz.
