Herbie's Catch of the Day
In a large heavy bottomed pot, bring cream and Herbie's Catch of the Day spice to a simmer over medium high heat.
Add the wine and the cleaned mussels to the pot and stir to combine.
Put on the lid and let steam 5-7 minutes until all of the mussels have opened.
Serve in a bowl with lots of bread for sopping up the sauce!
A Montrachet style wine with soft pear nose, wonderful mineral in the center palate and a touch of butterscotch on the finish.
