Spiced Mussels ~ Australian Style
- Mussels, cleaned and de-bearded · 2 pounds
- Heavy Cream · 2 cups
- Herbie's Catch of the Day · 2 tablespoons
- Amourette Chardonnay · 1 cup
In a large heavy bottomed pot, bring cream and Herbie's Catch of the Day spice to a simmer over medium high heat.
Add the wine and the cleaned mussels to the pot and stir to combine.
Put on the lid and let steam 5-7 minutes until all of the mussels have opened.
Serve in a bowl with lots of bread for sopping up the sauce!
