Ooh, these are so good. Sweetness from the caramelized apples is contrasted delightfully with salty cheddar and exotic spices. Make them for brunch, or a light supper, served with a green salad.
Sweet apples and sharp cheddar are a classic American pairing. These rustic tartlets combine buttery pastry, caramelized apples, and savory cheddar cheese into an elegant appetizer or light lunch.
Preheat oven to 400 degrees.
Place tart shells on a parchment lined sheet tray and bake until golden and puffed, 10-12 minutes. Let cool and scoop out centers to form cups.
Heat a heavy bottomed skillet on medium heat and melt the butter. Add the apples and saute, 2-3 minutes until softened. Add brown sugar, apple pie spice, and salt and saute 4-5 minutes until caramelized, careful to not let them burn.
Fill the tart shells with the apple pie mixture and top with the grated cheese.
Place tartlets back in oven until the cheddar is melted and bubbling slightly.
Jenny's Tip: - Serve warm with a chilled Williamson wine.
Chef's Tip: - For extra depth, use a combination of aged white cheddar and smoked cheddar, and finish with a few fresh thyme leaves just before serving.
