Apple Cheddar Tartlets
Ooh, these are so good. Sweetness from the caramelized apples is contrasted delightfully with salty cheddar and exotic spices. Make them for brunch, or a light supper, served with a green salad.
Ingredients
Puff Pastry Tartlet Shells, thawed

Granny Smith Apple

Brown Sugar

1/4 cup
Herbies Apple Pie spice
·
1 teaspoon
Salt
·
1 teaspoon
Lemon Juice
·
1 teaspoon
Sharp Cheddar Cheese, grated

6 ounces
Instructions
Preheat oven to 400 degrees.
Place tart shells on a parchment lined sheet tray and bake until golden and puffed, 10-12 minutes. Let cool and scoop out centers to form cups.
Heat a heavy bottomed skillet on medium heat and melt the butter. Add the apples and saute, 2-3 minutes until softened. Add brown sugar, apple pie spice, and salt and saute 4-5 minutes until caramelized, careful to not let them burn.
Fill the tart shells with the apple pie mixture and top with the grated cheese. Place tartlets back in oven until the cheddar is melted and bubbling slightly.
Aged for at least one year to achieve its complexity of flavors, this goat milk cheddar is smooth, nutty and slightly sweet, with a robust cheddar flavor.
