Wijngaard Kaas is a family business in Woerden that has existed since 1936 and ripens and sells cheeses in a traditional manner under the brand names Reypenaer, Wyngaard and Vegan Restaurant.

The Van den Wijngaard family has specialized in ripening cheese with great dedication for three generations. Not just any cheese, but the tastiest cheeses in the Netherlands, ripened under the influence of the special properties of a historic warehouse. In our historic cheese warehouse from 1906, the cheeses ripen slowly and for a long time in a special microclimate and natural changes in temperature and humidity by opening and closing the shutters. The natural changes give the complexity of the taste, which develops a particularly beautiful taste.

Our goal is tasty cheese through ripening where nature does its work.

In the large cheese market, taste is subordinated to costs. By ripening in cold conditions and high relative humidity, cheese loses as little weight as possible and the costs per kilo are therefore low, but this is at the expense of taste.

With our experience with natural ripening in the historic cheese warehouse in Woerden, we are convinced that flavor is created by higher temperatures and lower relative humidity and natural variations therein. The cheeses cheat more, lose more weight, but that benefits the taste.

Consumed in moderation, cheese is very healthy. You need less of tasty cheese (and that is also good for your wallet). Our inspiration is to develop an attractive and innovative range with these beautiful cheeses for social moments, both in the catering industry and at home.
