An internationally-known rice dish which originated in the fields of Valencia in eastern Spain, Paella gathers families and friends or entire towns to celebrate events. Paella is truly a dish for festivities.
Paella has a subtle saffron flavor.
Saffron, the spice that also turns the rice a wonderful golden color is an essential part of the dish.
Because paella is prepared in a wide, shallow pan, the rice is evenly cooked in a thin layer, allowing the grains to caramelize and become crispy.
Use half a teaspoon per cup of stock using your favorite casserole recipe.
The word paella means "frying pan" named for the large frying pan like implement used to cook it, made of iron or steel, which must have no more than 5 or 6 cm of depth. A traditional paella pan is a necessity. The pan is sometimes called a paellera, a large, flat, open round steel pan with handles.
Today paella is made in every region of Spain, using just about any kind of ingredient that goes well with rice. It may contain chicken, pork, shellfish, fish, eel, squid, beans, peas, artichokes or peppers. Use half a teaspoon of Herbie’s Paella Spice mix per cup of stock using your favorite recipe.
