Extra Brut, Blanc de Blanc, Vintage 2016 Fizz Champagne-style Sparkling White Wine made from a cuvée of Chardonnay.
Specifically made as a Blanc de Blanc from 100% Chardonnay grapes, contrasting with most Champagne that is a blend of three grapes, Chardonnay, Pinot Noir and Pinot Meunier, this is a crisp, refreshing and bright wine that can be used from any casual occasion to the most formal.
The luxury of six years en tirage allows the wine to gain wonderful secondary aromas and flavors of honey, hazelnut and biscuit, as well as showing its maturity with hints of creaminess and toast.
To taste correctly *Fizz* should be stored at a constant 50°F and kept away from light. Serve at the table, chilled but not icy, at 40°F so it may be tasted at 50°F allowing the aromas to develop and show.
Then with this full-flavored cuvée we commenced the next six years of the Méthode Champenoise process to produce a delicious example of a Californian Grower Champagne even though we can only call it a Sparkling Wine. The resultant wine is:
