Fiorito di Capra is a goat's cheese with a flowery rind and soft texture made with raw goat's milk.

Fiorito di Capra has a flowery rind and soft texture made with raw goat's milk. It has a white rind with gray hues as it ages.

In the mouth it is perfectly soluble, velvety and still releases mushroom aromas, supported by a pleasant acidity and medium intensity. The goat is felt, but it is not predominant and light citrus notes are also noticed.

The pasta becomes creamy as it ages thanks to the proteolysis process. Over time, in fact, this cheese gradually creams starting from the rind and then going deeper and deeper. The central part, therefore, is always slightly drier than the edges.

Fiorito di Capra is a really well made goat cheese, with scents of mold and undergrowth which contrast the goat aroma.

The producer of this cheese is the Dairy La Via Lattea, of Brignano Gera d'Adda, in the lower province of Bergamo, which uses exclusively Italian goat's milk (Bergamo) from nearby farms.

Fiorito di Capra is a goat cheese that has won several awards. We mention two of them all:

Super Gold Medal 2011 and Bronze Medal 2017 at the World Cheese Award (the most important international competition among cheese producers); Gold medal at Capr'Inov 2016, a French exhibition of international importance.
