Fiore di Capra - "Flower of the Goat" - is a rindless cheese produced in Sardinia, exclusively from goat’s milk and goat rennet, compact and white with no eyes. A soft fresh cheese with a cylindrical shape intended for fresh consumption.
A soft fresh cheese with a cylindrical shape, made with goat’s milk and intended for fresh consumption. Soft, spreadable, soft consistency with a pale white color Fiore di Capra has a very particular, delicate and naturally aromatic flavor with a slight hint of grass.
Its 90-day ageing period gives the cheese a sharp taste. It has no additives or preservatives (other than a light sprinkling of sea salt).
It can be used either as a spreadable table cheese or for grating (when matured a little longer).
Fiore di Capra has a 30 day shelf life.
