A perfectly charming French cheese from the heart of the Loire Valley made with pasteurized milk in small forms coated with vegetable ash.

Inside the cheese is stark white with a chalky texture in the center but developing a creamier paste closest to the rind with bright, lactic flavors.

The longer the period of aging, the drier the paste of the cheese becomes.

Background

Couronne de Fontenay is one of the several French cheeses coming from master affineur Rodolphe Le Meunier who continues the traditions and excellence inherited from 3 generations of cheesemongers.

The name of this elegant cheese means "crown" as it is shaped in a small crown-like ring.

After a 1-month aging period Couronne de Fontenay cheese develops a bloomy rind with its characteristic bluish-grey coloring. While edible, some people prefer to cut the rind away, especially if it is considered too thick.
