CMH Cabernet Sauvignon 2005

In the glass CMH shows a deep, dense, very dark ruby color with a bold nose offering complex aromatics of berry, cedar, and anise combined with a rich, underlying fruit concentration. The food-friendly mineral qualities reminiscent of Rutherford-dust in the center palate and a beautiful structured tannin finish ensure that our CMH will please the most discriminating wine lover for years to come.

NOTE: This wine has now exceeded our recommended bottle age period - if you still have one in your cellar, allow it to come to room temperature, carefully remove the cork and decant, without any splashing or bubbles. Taste immediately then let sit for 30 minutes and taste again. Continue tasting every 30 minutes until the wine is too good to wait any longer or until the wine is gone or the taster has fallen asleep. - Enjoy, Bill
Winter rains gave way to a dry, mild March in 2005 then began again with record-setting precipitation late into the growing season delaying bloom and set. The summer months were cool and pleasant with few heat spikes. Fog and cool temperatures were a concern heading into September as sugar levels were yet to rise in all varieties. Warm, nearly perfect conditions arrived with an Indian Summer making for a later than average harvest, providing fruit with extended hang and ultimately realizing excellent sugar development and balanced acids with a larger than average crop of what could be signature vintages from Sonoma and Napa Valley.
French Oak for 22 months, approximately 40% new, 40% one use and the balance neutral.
