Herbie’s Amok Spice Mix captures the fragrant spirit of Cambodia’s beloved national dish, Amok—a delicate, aromatic curry traditionally cooked with fish and coconut milk. This carefully balanced blend of spices makes it easy to recreate the dish at home with authentic flavor and warmth.

The special spice blend comes out of the cooking method where the dish is steamed in foil. The aroma is released when the foil is opened to reveal the amok - almost a meal in itself!

But you don't have to make a curry to enjoy the flavor. Our Amok spice mix can be used with vegetables or as a crusting for fish, chicken or pork and so review our recipes or create you own ideas for this incredibly beautiful spice mix.

Herbie’s Amok Spice Mix is a vibrant, aromatic blend that brings the authentic flavors of Cambodian Amok to your kitchen. This carefully crafted mix combines chili, turmeric (Madras & Alleppey), garlic, ginger, paprika, cumin, coriander seed, galangal, kaffir lime leaf, kenchur, black pepper, and lemon myrtle leaf—each ingredient adding depth, warmth, and a subtle complexity to your dish.

The chili and black pepper give a gentle heat, turmeric and paprika lend earthy warmth and color, while garlic, ginger, and galangal provide fragrant spiciness. Coriander seed and cumin add a nutty, aromatic backbone, and the citrusy notes of kaffir lime leaf and lemon myrtle leaf lift the flavors beautifully. Kenchur contributes a subtle, smoky undertone, rounding out the blend with an exotic edge.

Amok is a celebratory dish from Cambodia that is traditionally cooked in a banana or palm leaf, but you can use any heatproof bowl that fits inside your steamer.

The mix brings together a harmonious combination of spices that create Amok’s signature profile: gently aromatic, lightly spiced, and beautifully rounded. When simmered with coconut milk and your choice of fish, chicken, or vegetables, it develops a rich, creamy curry with subtle citrusy and earthy notes.

Simply add the spice mix to coconut milk and your main ingredient, then simmer until fragrant and tender. The result is a comforting Cambodian-style curry with layers of flavor—perfect served over steamed rice and finished with fresh herbs.

Amok may also be cooked in a wok or a saute pan for convenience. This dish should not be chili hot, relying instead on fragrant and zesty flavors for its character.
