Recipes

For a special treat coat salmon and tuna steaks and barbecue or use with smoked salmon served with fresh dill-weed.

This versatile all-Australian blend has a robust lemon flavor from Lemon Myrtle Leaf which complements the deep pungency of Mountain Pepper Leaf. The salty flavor comes from pure sea salt which every human body needs to sustain life.

Lemon Myrtle - also known as Sweet Verbena, is an ingredient from a subtropical plant only found in Australia and has been used for medicine and flavoring in Australia for hundreds of years. Lemon Myrtle is notable because it contains the highest purity of citral of any of the citrus herbs and fruits. This makes it particularly suitable for spice blending as it adds strong citrus tones to blends, even when only small quantities are used.

Mountain Pepper Leaf - Mountain pepper or Tasmanian native pepper is a shrub that grows in the alpine regions of Tasmania and southeast mainland Australia. This native plant produces aromatic leaves, and during the autumn months develops small fleshy blackberries on its distinctive reddish stems. Both the leaves and berries are dried for use as a cooking spice, and when milled, the hardened berries make for a terrific substitute for conventional pepper. With potent antioxidants, four times more powerful than the beloved blueberry, mountain pepper’s health benefits are just as useful today as they have been over centuries.

When combined the astonishing range of properties of Lemon Myrtle and Mountain Pepper make them essential ingredients for good health.

Anti-microbial Antimicrobials kill and/or stop the growth of microorganisms and are commonly used in medicines to stop or inhibit the growth of dangerous microorganisms in the body - an important tool in controlling or fighting infections.

Antibiotic The same properties that make this combination antimicrobial also make it antibiotic - used for the treatment and prevention of bacterial infections.

Antiseptic This combination is also antiseptic. Whilst antibiotics help with the control of bacterial infections within the body, antiseptics work as bacterial-fighters on the surface of the skin.

Antiviral Viral infections are very different to bacterial infections, but this combination has been widely used in the treatment of both. Antivirals attack viruses, either helping to prevent them taking hold in the body, or to cause them to pass more quickly.

Anti-inflammatory This combination is anti-inflammatory and therefore frequently used in the treatment of congestion and reduction of mucus and can be used to help with light pain and discomfort of inflammation without the use of painkillers and steroids.

High in Antioxidants Antioxidants are used to inhibit oxidization in the body. This helps to prevent the production of free radicals which are known to damage cells in the body. These compounds are famous for high antioxidant content.
