Wild Shrimp & Charred Scallion

Wild caught shrimp from the Gulf is the most sustainable and gives your dish the best quality seafood available. Serve as a light appetizer with charred scallions and the robust aroma of our sweet smoked paprika.

Ingredients

  • FOR THE SHRIMP  ·   
  • Wild Caught Shrimp, peeled and deveined  ·  1 pound 
  • bunches of scallions  ·  2 
  • olive oil  ·  2 tablespoons 
  • salt  ·  1 teaspoon 
  • black pepper  ·  1 teaspoon 
  • FOR ROMESCO SAUCE  ·   
  • roasted red peppers, drained and rinsed  ·  16 ounces 
  • cloves peeled garlic  ·  3 
  • toasted hazelnuts  ·  1/2 cup 
  • toasted almonds  ·  1/2 cup 
  • honey  ·  3 tablespoons 
  • Herbie's Hot Paprika  ·  1 tablespoon 
  • Herbie's Smoked Sweet Paprika  ·  1 tablespoon 
  • salt  ·  2 teaspoons 
  • extra virgin olive oil  ·  1/2 cup 

Instructions


For Charred Scallions

  • Preheat grill to 400 degrees.
  • Toss scallions with 2 tablespoons of olive oil and salt and pepper.
  • Grill scallions until slightly charred, flipping after 3-5 minutes.
  • After scallions cool, chop and reserve in serving bowl.

For Shrimp

  • Bring a pot of salted water to a boil.
  • Add shrimp and bring to a simmer, and gently poach 5 minutes until shrimp have just turned opaque.
  • Place in a bowl of ice water to stop the cooking. Refrigerate until ready to serve.

For Romesco

  • Place the rest of the ingredients in a food processor or blender and puree 2-3 minutes until all ingredients are smooth.
  • Transfer to serving bowl or plate.
